Fish drying in Indonesia

These proceedings examine the issues behind Indonesia's dried fish industry and prospects for improving the quality of dried fish. Papers include discussions of results from ACIAR-funded project research, including salting and drying studies and a description of the project-developed rice-husk fired furnace and drying chamber.
